The first rhubarb of the year is harvested by candlelight in dark sheds dotted around the Rhubarb Triangle. This produces a sweeter, more tender stalk.

Listening to Rhubarb Growing
In the sheds, you can actually hear the rhubarb growing. We like to do this, just like we do in Iowa on summer nights — listen to corn growing.
